BBC Radio gets on air lesson in desserts from Loughborough College

BBC Radio got a lesson in desserts from Loughborough College when prize-winning chefs Darren Creed and Emily Bucknall featured on Food Friday this morning.

Presenter Martin Ballard talked to International Culinary Olympics medalist and chef lecturer Darren and multiple award-winner Emily – who has secured a position with two Michelin star Restaurant Sat Bains straight from completing her course at Loughborough College – as they created Chocolate Truffle Hazelnut and Marquise with raspberry jelly and hazelnut praline crumb.

Darren described Emily as “one of the most successful students in the 17 years I have been here” but his former student revealed that although all the opportunities she’d been given over her two year course had boosted her confidence, she had saved her skill for college and competitions. “My parents don’t like me because I don’t cook at home.”

Emily spent only three days in Sat Bains’ kitchen gaining experience when the world famous chef offered her a job. “I’m a bit nervous but very excited. I’m starting at the bottom as a commis chef but that’s to be expected straight from college. Hopefully I will work my way up.”

Martin Ballard was given a lesson in spiralising sugar along the way and declared the finished dessert a triumph. “It really does excite the palette.”
