Students join guest chefs for sell out takeover at Loughborough College Radmoor Restaurant

Students helped cook up a sell-out success when they joined guest chefs for a takeover evening at the Loughborough College Radmoor Restaurant.

Mark Fletcher and Jon Fell worked alongside the hospitality and catering students to create and serve an outstanding five course menu to the award-winning restaurant’s diners.

Mark Fletcher is passionate about sharing his expertise and developing the next generation of culinary leaders and was making a return visit to the College. The Executive Head Chef of The Mere Golf Resort and Spa in Cheshire has more than two decades’ experience with Michelin starred restaurants and some of the UK’s top hotels.

It was also familiar territory for Jon Fell, who graduated from Loughborough Catering College in 1990. Jon now appears on Nigel Barden’s Drive Time Dishes on Amazon Prime and as a seafood chef on Simply Good Food TV. Alongside this, he is dedicated to teaching and mentoring young chefs, including as a seafood masterclass chef at Peter Sidewell Keswick Cookery School and with the catering school at neighbouring Lakes College.

A scallop starter with pork belly, apple cider emulsion and potato was followed by salmon with gin, beetroot, cucumber, lemon puree and confit lemon. “Jon cured the salmon with local Burleigh gin and the beetroot gave the dish an amazing deep red colour,” said Loughborough College chef lecturer and hospitality and catering lead Darren Creed.

“AHDB meats provided some incredible fillets which enabled our students to get first hand experience of creating a traditional Beef Wellington with port wine jus for the main course. That was then followed by Sable Breton with caramel and lemon and a duck egg custard tart.

“There was so much enthusiasm in the kitchen and our students were involved in everything from beginning to end. They had the opportunity to be hands on with every course, picking up some amazing skills and techniques. The feedback from diners was outstanding.

“We can’t thank Mark and Jon enough. It was another resounding success. Our guest chef evenings offer our students – and diners - a brilliant experience and they’re a great way for us to showcase the work we’re doing at Loughborough College.”
